1 Zucchini (washed and sliced)
1 Egg (whisked)
¾ cup Panko Bread Crumbs
⅓ cup Flour
1 teaspoon Salt
½ teaspoon Paprika
½ teaspoon Pepper
½ teaspoon Onion Powder
¼ teaspoon Cayenne Pepper
¼ cup Olive Oil
Instructions
Preheat your air fryer to 400°F.
In a medium mixing bowl stir together ¾ cup panko, ⅓ cup flour, 1 teaspoon salt, ½ teaspoon pepper, ¼ teaspoon cayenne pepper, and ½ teaspoon onion powder. Set the bowl aside.
In a small mixing bowl whisk 1 egg.
Slice zucchini into 1/4-inch thick disks.
Dip the zucchini slice into the egg, then coat with the bread crumb mixture.
Repeat the breading process until all slices of zucchini are coated.
Drizzle with 2 Tablespoons olive oil on both sides, using a total of ¼ cup olive oil.
Place the spicy zucchini bites in a single layer in the air fryer basket. You may need to do this in two batches.
