Soft Vegan Lime Cookies

These soft, melt in your mouth vegan lime cookies come together in under 30 minutes for the ultimate sweet meets tart cookie.

Ingredients

  • 1 Tablespoon Ground Flaxseed
  • 2½ Tablespoons Water
  • ½ cup Plant Butter (room temperature )
  • ⅓ cup Sugar
  • 1 Tablespoon Lime Zest
  • ½ teaspoon Vanilla
  • 1 cup Flour
  • ¼ teaspoon Baking Powder
  • ¼ teaspoon Salt

Lime Glaze

  • ¾ cup Powdered Sugar
  • 1 Tablespoon Fresh Lime Juice

Instructions

  1. In a small mixing bowl stir together 1 Tablespoon ground flax and 2½ Tablespoons water. Allow to rest about 5 minutes.
  2. Preheat the oven to 350°F and line a baking sheet with parchment paper or a non-stick mat.
  3. In the base of a stand mixer fitted with a paddle attachment cream together ½ cup plant butter, ⅓ cup granulated sugar, and 1 Tablespoon lime zest for about 3 minutes, scraping down the sides as needed.
  4. Next add the flax egg and ½ teaspoon vanilla to the bowl and mix about 1 minute.
  5. In a medium mixing bowl stir together 1 cup flour, ¼ teaspoon salt, and ¼ teaspoon baking powder.
  6. On the lowest speed, spoon in the flour mixture until just combined.
  7. Remove from the mixer and scoop 1 1/2 Tablespoon sized balls of dough onto the parchment paper.
  8. Press the tops down gently and bake about 14 minutes.
  9. Remove from oven and cool on the baking sheet.
  10. In a small bowl mix together ¾ cup powdered sugar and 1 Tablespoon lime juice. Spoon over the top of the cookies and allow to set.
