1 Tablespoon Ground Flaxseed
2½ Tablespoons Water
½ cup Plant Butter (room temperature )
⅓ cup Sugar
1 Tablespoon Lime Zest
½ teaspoon Vanilla
1 cup Flour
¼ teaspoon Baking Powder
¼ teaspoon Salt
Lime Glaze
¾ cup Powdered Sugar
1 Tablespoon Fresh Lime Juice
Instructions
In a small mixing bowl stir together 1 Tablespoon ground flax and 2½ Tablespoons water. Allow to rest about 5 minutes.
Preheat the oven to 350°F and line a baking sheet with parchment paper or a non-stick mat.
In the base of a stand mixer fitted with a paddle attachment cream together ½ cup plant butter, ⅓ cup granulated sugar, and 1 Tablespoon lime zest for about 3 minutes, scraping down the sides as needed.
Next add the flax egg and ½ teaspoon vanilla to the bowl and mix about 1 minute.
In a medium mixing bowl stir together 1 cup flour, ¼ teaspoon salt, and ¼ teaspoon baking powder.
On the lowest speed, spoon in the flour mixture until just combined.
Remove from the mixer and scoop 1 1/2 Tablespoon sized balls of dough onto the parchment paper.
Press the tops down gently and bake about 14 minutes.
Remove from oven and cool on the baking sheet.
In a small bowl mix together ¾ cup powdered sugar and 1 Tablespoon lime juice. Spoon over the top of the cookies and allow to set.
