Sweet meets tart in this soft vegan lime cookies recipe. These eggless lime cookies are a melt in your mouth cookie topped with a zesty lime glaze. Ready in under 30 minutes, these dairy-free cookies are a refreshing cookie everyone will enjoy!

My children enjoy the tart flavor of fresh lemons and limes, so I often pick a few up and keep them on hand in the fridge. After a few weeks of collecting limes without anyone really requesting them I noticed I had a small stockpile desperately needing an outlet.

The lemons were easy to make into lemon basil popsicles, a moist lemon cake, and even just simply adding to my evening cups of tea. The limes on the other hand took on the form of these vegan lime cookies.

Vegan Changes to Soft Lime Cookies

These vegan soft lime cookies were adapted from Handle the Heat’s Glazed Lemon Cookie Recipe. There are a few changes to note that make these delicious lime cookies vegan.

  • Flax Egg– In place of a traditional egg, I have used a mixture of ground flax and water to substitute the egg.
  • Plant Butter– To replace traditional butter, I have replaced it with a plant-based alternative.

How to Make Vegan Lime Cookies

Ingredient Notes

  • Flax Egg– A mixture of room temperature water and ground flax to substitute an egg.
  • Plant Butter– At room temperature.
  • Sugar– Granulated sugar helps balance the sweet and tart in these cookies.
  • Lime Zest– Fresh grated lime zest gives the cookie base a delicious flavor.
  • Vanilla– For an extra boost of flavor.
  • Flour– All purpose flour works perfectly in this recipe.
  • Salt + Baking Powder– Adds flavor and gives the cookies a little rise.
  • Glaze– A simple powdered sugar glaze made with lime juice to top off the cookies.

Step-by-Step Directions for Soft Vegan Lime Cookies

  • Make flax egg: In a small mixing bowl stir together ground flax and water. Allow to rest about 5 minutes.
  • Prepare for baking: Preheat the oven to 350°F and line a baking sheet with parchment paper or a non-stick mat.
  • Cream zest, butter, + sugar: In the base of a stand mixer fitted with a paddle attachment cream together plant butter, granulated sugar, and lime zest for about 3 minutes, scraping down the sides as needed.
  • Add wet ingredients: Next add the flax egg and vanilla to the bowl and mix about 1 minute.
  • Mix dry ingredients: In a medium mixing bowl stir together flour, salt, and baking powder.
  • Add dry ingredients: On the lowest speed, spoon in the flour mixture until just combined.
  • Scoop: Remove from the mixer and scoop 1 1/2 Tablespoon sized balls of dough onto the parchment paper.
  • Press + Bake: Press the tops down gently and bake about 14 minutes.
  • Cool: Remove from oven and cool on the baking sheet.
  • Glaze: In a small bowl mix together powdered sugar and lime juice. Spoon over the top of the cookies and allow to set.

Ingredients

  • 1 Tablespoon Ground Flaxseed
  • Tablespoons Water
  • ½ cup Plant Butter room temperature
  • cup Sugar
  • 1 Tablespoon Lime Zest
  • ½ teaspoon Vanilla
  • 1 cup Flour
  • ¼ teaspoon Baking Powder
  • ¼ teaspoon Salt

Lime Glaze

  • ¾ cup Powdered Sugar
  • 1 Tablespoon Fresh Lime Juice

Instructions

  1. In a small mixing bowl stir together 1 Tablespoon ground flax and 2½ Tablespoons water. Allow to rest about 5 minutes.

  2. Preheat the oven to 350°F and line a baking sheet with parchment paper or a non-stick mat.
  3. In the base of a stand mixer fitted with a paddle attachment cream together ½ cup plant butter, ⅓ cup granulated sugar, and 1 Tablespoon lime zest for about 3 minutes, scraping down the sides as needed.

  4. Next add the flax egg and ½ teaspoon vanilla to the bowl and mix about 1 minute.

  5. In a medium mixing bowl stir together 1 cup flour, ¼ teaspoon salt, and ¼ teaspoon baking powder.

  6. On the lowest speed, spoon in the flour mixture until just combined.
  7. Remove from the mixer and scoop 1 1/2 Tablespoon sized balls of dough onto the parchment paper.
  8. Press the tops down gently and bake about 14 minutes.
