Roasted Tomato Orzo

Oven-roasted tomato orzo pasta makes the perfect weeknight pasta recipe. This dairy-free, vegan pasta comes together in 25 minutes for a delicious dish!

I have been on an orzo and tomato kick lately and I don’t see it ending anytime soon. We are currently in limbo living in a basement apartment while we prepare to close on a house so I have been all about the easy-to-make dinners and what could be easier than boiling a pot of pasta?

Much like the Bacon and Potato Quiche, this delicious dish came out of a need to use ingredients added into the shopping cart by my loving husband. He swore he would eat these grape tomatoes, you know, as a snack… When they were nearing their expiration I took fate into my own hands and roasted the beauties, mashed them, and tossed them with some orzo.

WHY YOU’LL LOVE THIS DISH

While tomatoes are in season, you must make this roasted tomato orzo. Oven blistered tomatoes with olive oil and salt cook together with onion and garlic and are then tossed with fresh boiled orzo in this delicious dish. But if tomatoes and pasta weren’t enough of a reason to love this recipe you can also add these as reasons to love this recipe.

HOW TO MAKE ROASTED TOMATO ORZO

PREPARE THE ORZO PASTA

Fill a medium sauce pan with about 4-8 quarts of water. Bring the water to a boil over medium high heat. Once boiling salt the water and add 1 cup orzo pasta. Stir the pasta and reduce the heat to medium.

Cook the pasta 8-10 minutes until cooked through. Drain and set aside until you are ready to toss the pasta in with the tomatoes.

OVEN ROAST THE TOMATOES

Preheat the oven to 375°F. In an oven safe pan, I use my cast iron skillet, add 2 pints of grape tomatoes, 1/4 cup olive oil, and 1 teaspoon salt. Stir to coat the tomatoes in olive oil. Roast the tomatoes in the oven for 15 minutes.

While the tomatoes roast, chop 1 onion and 4 pods of garlic. Set aside.

Once you remove the tomatoes from the oven, place on medium warm burner and add onion and garlic. While cooking the onion, press the grape tomatoes with the back of your spoon to mash. Mash all of the tomatoes then add the pasta to the pan.

Stir the pasta into the roasted tomatoes to coat. Taste and adjust salt as needed. Serve with fresh basil and enjoy!

Ingredients

  • 2 pints Grape Tomatoes
  • ¼ c. Olive Oil
  • 1 tsp. Salt
  • 1 Onion diced
  • 4 pods Garlic diced
  • 1 c. Orzo Pasta uncooked

Instructions

  1. Preheat the oven to 375°F.

  2. In an oven-safe skillet, stir together grape tomatoes, olive oil, and salt. Roast in the oven for 15 minutes.

  3. While the tomatoes roast, cook the pasta according to package directions. Drain and set aside.

  4. After 15 minutes, remove tomatoes from the oven and place on the burner. Add onions and garlic and stir to cook. Press the tomatoes with a spoon while you cook until all tomatoes are smashed.

  5. Add the cooked pasta into the skillet and stir to coat. Season with additional salt and pepper as needed and garnish with basil.
