Pesto Egg Toast

Ingredients

  • 2 Tablespoons Fresh Pesto (dairy-free)
  • 1 large Egg
  • Salt + Pepper (to taste)
  • 1 slice Bread (toasted)

Instructions

  1. Place bread in toaster and toast to your desired level of doneness.
  2. Heat a small non-stick skillet over medium-low heat.
  3. Add 2 Tablespoons pesto to the pan and make a small well in the center of the pesto.
  4. Once hot, crack 1 large egg in the center of the pesto.
  5. Cover and cook about 2 minutes or until the egg white has set.
  6. Transfer the pesto egg to your toasted bread and top with salt, pepper, green onion, etc.
