Peppermint Rice Krispies
½ cup Plant Based Butter
10 ounces Mini Marshmallows
6 cups Rice Krispie Cereal
¼ cup Crushed Peppermint
1 pinch Salt
Peppermint Bark Topping
1 cup Dairy-free Chocolate Chips
1 teaspoon Coconut Oil
¼ teaspoon Peppermint extract
Crushed Peppermint (to top the treats)
Instructions
In a large pot melt ½ cup plant based butter over medium-low heat.
Once the vegan butter melts add 10 ounces mini-marshmallows and cook until mostly melted. Remove from heat until marshmallows are completely melted.
Stir in 6 cups rice krispie cereal, ¼ cup crushed peppermint pieces, and a pinch of salt.
Pour the peppermint rice krispie treats into a parchment lined square baking dish and press into the pan. Allow the rice krispie treats to cool before cutting into squares or triangles or whatever shape your little heart desires.
Once the peppermint rice krispies have been cut prep the peppermint bark topping. In a small bowl melt 1 cup dairy-free semi-sweet chocolate chips with 1 teaspoon coconut oil. Once smooth, add ¼ teaspoon peppermint extract.
Dip the tops of the rice krispie treats into the peppermint chocolate and sprinkle with crushed candy canes or peppermints and nom away!
