Pre-heat the oven to 450°F and line a 9in X 13in baking dish with aluminum foil. I like to leave extras on the sides so I can cover the chicken at the end of the recipe without an extra piece.
In a small bowl, combine the salt, pepper, garlic powder, onion powder, and chili powder.
Rinse and dry the chicken breasts. On a cutting board, beat the chicken until even.
Drizzle olive oil on the tops of the chicken and massage it in to the tops of the breasts. Sprinkle half of the seasoning over the tops of the chicken and rub into the chicken.
Flip chicken breast over and repeat oil, massage, seasoning, massage.
Bake in the oven for 15-20 minutes. Remove from oven when thermometer reads about 165° F. Cover chicken with foil and allow to rest for 5-10 minutes.
Serve as is, or chop into cubes for a great topping on salads or addition into a wrap.
