Oven Baked Chicken Breasts

These oven baked chicken breasts are healthy, flavorful, and easy to make. From start to finish they will be done in under 45 minutes. It’s Whole30, paleo, and dairy-free. This juicy chicken can stand alone or be used in sandwiches, wraps, or salads.
I am guilty of going overboard on vacation. I eat all the bread, drink all the wine and umbrella drinks, and always order dessert. And after every vacation I decide I should take some time for clean eating. You probably know this song and dance well. Less alcohol, less bread, and less desserts.
Typically I stress about finding the right recipes to make when we go through this process and always forget the most simple of strategies. Veggies + Lean protein = Simple clean eating happiness. These flavorful chicken breasts will be the answer to your healthy meal prepping needs.

Tips to make these chicken breasts
- Pound the chicken before you pat them dry.
- Use your fists to pound the chicken if you do not have a meat tenderizer.
- Use one hand to pour ingredients on to the chicken and the other hand to massage into the chicken to avoid contaminating your materials.
- Don’t measure the olive oil perfectly. I drizzle a tiny amount on each and rub them in. The 2 tsp. is simply a guide.
- Use extra foil in the dish to easily cover for the resting.

Oven Baked Chicken
Juicy and flavorful oven baked chicken breasts. Whole30, paleo, and dairy free. Easy for meal prep and made in under 45 minutes.
Ingredients
- 2 lb. Boneless Skinless Chicken Breasts (2-3 breasts)
- 2 Tbsp. Olive Oil
- 1 tsp. Kosher Salt
- ½ tsp. Pepper
- ½ tsp. Garlic Powder
- ½ tsp. Onion Powder
- ½ tsp. Chili Powder
Instructions

Pre-heat the oven to 450°F and line a 9in X 13in baking dish with aluminum foil. I like to leave extras on the sides so I can cover the chicken at the end of the recipe without an extra piece.

In a small bowl, combine the salt, pepper, garlic powder, onion powder, and chili powder.

Rinse and dry the chicken breasts. On a cutting board, beat the chicken until even.

Drizzle olive oil on the tops of the chicken and massage it in to the tops of the breasts. Sprinkle half of the seasoning over the tops of the chicken and rub into the chicken.

Flip chicken breast over and repeat oil, massage, seasoning, massage.

Bake in the oven for 15-20 minutes. Remove from oven when thermometer reads about 165° F. Cover chicken with foil and allow to rest for 5-10 minutes.

Serve as is, or chop into cubes for a great topping on salads or addition into a wrap.
