2 Tablespoons Ground Flax
2 Tablespoons Water
1 cup Old Fashioned Oats
¼ cup Almond Butter
¼ cup Maple Syrup
1 Tablespoon Brewer's Yeast
2 Tablespoons Shredded Coconut ((plus more to garnish))
¼ cup Vegan Chocolate Chips
Instructions
In a small bowl mix together 2 Tablespoons ground flax with 2 Tablespoons water. Allow mixture to sit 5 minutes.
In a medium sized mixing bowl stir together 1 cup old-fashioned oats, ¼ cup almond butter, ¼ cup maple syrup, 1 Tablespoon brewer's yeast, 2 Tablespoons shredded coconut, the ground flax mixture, and ¼ cup chocolate chips.
Cover the bowl with plastic wrap and refrigerate at least 1 hour.
Scoop and roll into 1-inch sized balls.
Optional: Roll into shredded coconut and drizzle with melted vegan chocolate.
