Confession, I am not a big fan of leftovers. However, I love to up cycle leftovers because I am more likely to finish them when I repurpose them into something new.

Take my juicy southwest chicken breasts for example. They are excellent on their own but come day 2 I want them in a burrito bowl. Day 3 of these zesty chicken breasts is looking like southwest chicken tacos.

With that in mind, these Greek Chicken Hummus Bowls came from my love affair with this marinated lemon and parsley chicken thigh recipe and my obsession with finishing my leftovers.

For the most part, this recipe is a simple dairy-free delight. I toss a little vegan feta on at the end because I am low key obsessed with it at this point in my life.

How to Make Greek Chicken Hummus Bowls

Ingredients You’ll Need

  • Greek Marinated Chicken– You can make chicken thighs for this recipe or use your leftovers in these hummus bowls.
  • Hummus– Honestly store-bought hummus works great in this recipe.
  • Cucumbers and Tomatoes– Fresh and chopped into your desired bite size.
  • Pita Chips– Homemade or store-bought help scoop up the deliciousness of these hummus bowls.

Step-by-Step Directions for Greek Chicken Hummus Bowls

Greek Marinated Chicken

  • Make the marinade– Whisk together lemon juice, lemon zest, olive oil, garlic, parsley, salt, pepper and oregano.
  • Marinate: Place the chicken thighs in the marinade and coat on both sides. Marinate for at least 30 minutes and up to 24 hours.
  • Heat the grill pan over medium heat.
  • Cook: Once hot, place the chicken thighs down in a single layer, making sure they do not touch. Cook for 6 minutes.
  • Flip and cook for an additional 6 minutes.
  • Check the internal temperature of the thickest part of the chicken thigh to see that they are roughly 165°F.
  • Remove the pieces that are cooked through and leave any additional pieces on that may need an extra minute or two.
  • Let the chicken rest about 5-10 minutes before slicing and serving.

Assemble the Chicken and Hummus Bowls

  • Slice the chicken into the strips or cubes.
  • Hummus: In a large bowl or meal prep container add 1/2 cup hummus.
  • Add chicken: Place roughly one chicken thigh into your bowl.
  • Veggies: Add 1/4 of the diced cucumber and tomatoes into the bowl.
  • Garnish with vegan feta cheese, fresh parsley, and pita chips.

Greek Marinated Chicken Thighs

  • 1 Lemon zested and juiced
  • ¼ cup Olive Oil
  • 2 cloves Garlic minced or microplaned
  • 2 Tablespoons Fresh Parsley minced
  • ½ teaspoon Salt
  • ½ teaspoon Pepper
  • ½ teaspoon Oregano
  • 1.5-2 pounds Chicken Thighs boneless skinless

Hummus Bowls

  • 1 pint Grape Tomatoes
  • 1 Cucumber diced
  • 16 ounces Plain Hummus
  • Vegan Feta for garnish
