For my first simple summer toast I am sharing this easy recipe for a grated egg on toast. My first encounter with this recipe came from Healthyish Foods. I loved this twist on serving a hard boiled egg on toast.

The texture of the egg is light and fluffy and sticks to the avocado beautifully. It’s “grate” on its own or served up with different toppings.

  • Use pre-made hard boiled eggs. Make a batch of hard boiled eggs, peel them, and pop them in the fridge to use later in the week.
  • Fresh made hard boiled eggs are too soft. If you’re in a pinch, you can make a hard boiled egg and pop it in the fridge for about a half hour before you grate it over the toast but I highly recommend making them in advance for an easier to grate egg.
  • Any grater will do. You do not have to go out and buy a fancy grater for this recipe. The big cheese grater works just as well as the microplane but the texture of the egg will vary based on the grater you use.

  • Hard Boiled Eggs– You will want to buy pre-made hard boiled eggs or make yours in advance to allow the egg to firm up before grating.
  • Toast– Pick your favorite savory dairy-free bread for toasting. We like to use a simple sourdough loaf.
  • Avocado– (Optional) A ripe avocado for smashing on the base of the toast.
  • Seasoning– Salt and pepper elevate the flavor of the avocado and egg.
  • Olive Oil- Just a little drizzle at the end.

Step-by-Step Directions for Grated Hard Boiled Egg on Toast

This recipe is merely a guide. If you do not want to add avocado omit it or see the serving suggestions below for a variety of different ways to top this grated egg on toast recipe.

  • Slice: If you have a whole loaf instead of a pre-sliced loaf, slice the bread to your desired thickness.
  • Toast the bread to your desired level of doneness.
  • Smash 1/2 of an avocado on one slice of toast.
  • Grate a hard boiled egg over the smashed avocado toast.
