Dairy-Free Greek Chicken Quesadillas

This dairy-free Greek-inspired twist on a simple chicken quesadilla is made with flour tortillas, juicy chicken thighs, and Roma tomatoes.

  • 2 Flour Tortillas
  • 3 Tablespoons Vegan Feta Crumbles
  • 2 Tablespoons Greek Chicken
  • 1 Tablespoon Diced Roma Tomatoes

Instructions

  1. Heat a skillet over medium low heat.
  2. Add one flour tortilla to the pan.
  3. Sprinkle 3 Tablespoons vegan feta cheese, 1-2 Tablespoons chicken, and 1 Tablespoon diced Roma tomatoes over the top.
  4. Top with remaining tortilla and cook until the bottom tortilla is lightly brown.
  5. Using a large spatula, flip the tortilla carefully (to prevent the fillings from falling out).
  6. Cook about 2-3 minutes or until the bottom is lightly brown.
  7. Remove from heat and serve.
