8 ounces Spaghetti Noodles
1 pound Shrimp (peeled and deveined)
4 Tablespoons Vegan Butter
½ Onion (diced)
4 cloves Garlic (microplaned/grated)
2 Tablespoons Flour
1½ cups Oat milk (or other thick non-dairy milk)
2 cups Spinach (chopped)
1 teaspoon Salt
½ teaspoon Pepper
2 Tablespoons Lemon Juice
Fresh basil or parsley (for garnish)
Instructions
Bring a large pot of water to boil. Salt the water, then add 8 ounces spaghetti noodles and cook according to package directions. Remove pasta but keep the water in the pot.
In the same pot of water, boil 1 pound peeled and deveined shrimp for about 3-5 minutes or until shrimp turn pink. Remove the shrimp and set aside.
Melt 4 Tablespoons plant-based butter over medium heat in a large skillet. Add diced onion and cook about 3 minutes, until tender.
Next add 4 cloves grated garlic and cook about 30 seconds.
Once fragrant, whisk in 2 Tablespoons flour, and cook until golden.
Slowly whisk in 1½ cups oat milk. Once it's thick and creamy, remove from heat.
Off heat, stir in 2 cups chopped spinach, 1 teaspoon salt, ½ teaspoon pepper, and 2 Tablespoons lemon juice. Toss with pasta and shrimp. Serve and enjoy!
