Creamy Grits

Ingredients

  • 1 cup Water
  • 1 cup Non-dairy Milk (I use oatmilk)
  • ½ cup Grits
  • 2 tablespoons Plant-Based Butter
  • ½ teaspoon Salt

Instructions

  1. In a medium saucepan heat 1 cup of non-dairy milk and 1 cup of water over medium-high heat. Bring to a boil.
  2. Once boiling, whisk in ½ cup grits and reduce the heat to low.
  3. Continue whisking, not constantly but do not leave them unattended, for about 5 minutes until thick and creamy. Whisk in 2 tablespoons butter and ½teaspoon salt and cook for about 3 more minutes.
  4. Remove from heat and serve. Add additional plant-based butter, salt, and toppings as desired. See serving suggestions below for additional topping ideas.

Notes

Serving Suggestions

  • Eggs- Top with a hard fried or goopey egg.
  • Green onion- Garnish with some fresh chopped green onion.
  • Cheese- Violife Just Like Cheddar Shreds make an excellent topping for these creamy grits.
  • Bacon Bits- Freshly cooked bacon chopped and sprinkled on top (especially with a goopey egg).
  • Shrimp- Turn this dish into a southern classic, shrimp and grits, with some fresh cooked grits.
