Cinnamon apples meet banana bread in this moist and dairy-free cinnamon apple banana bread recipe. Made with layers of moist banana bread topped with decadent brown sugar cinnamon apples, this apple banana bread is sure to hit the spot.

Ingredients

  • 2 Bananas, ripe
  • ½ cup Sugar, granulated
  • 1 large Egg, room temperature
  • 1 teaspoon Vanilla
  • 1 ½ cups Flour, all purpose
  • 1 teaspoon Baking Soda
  • ⅛ teaspoon Salt, table
  • 1 Granny Smith Apple, peeled and chopped
  • ½ cup Brown Sugar, light
  • 1 ½ teaspoons Ground Cinnamon

Instructions

  1. Preheat the oven to 350°F and spray a loaf pan with non-stick spray. Set the loaf pan to the side until later.
  2. In a large mixing bowl mash 2 bananas. 
  3. Once well mashed, add ½ cup granulated sugar, 1 egg, and 1 teaspoon vanilla. Mix until smooth.
  4. With a rubber spatula, fold in 1½ cups all purpose flour, 1 teaspoon baking soda, and ⅛ teaspoon salt. Set the banana bread batter to the side.
  5. In a medium sized mixing bowl, stir ½ cup brown sugar and 1½ teaspoons ground cinnamon.
  6. Next add the peeled and diced apples into the cinnamon brown sugar mixture and toss to coat. 
  7. Pour half of the banana bread batter into the prepared loaf pan and top with half of the cinnamon sugar apples mixture. 
  8. Spread the cinnamon apple mixture out evenly over the batter and then top with the remaining batter and finish with the remaining cinnamon apples.
  9. Bake in the preheated oven for 65 minutes.
