Chocolate Banana Bread with Chocolate Chips

Ultra-moist chocolate banana bread with an abundance of sweet chocolate chips speckled throughout. This delicious quick bread is the perfect recipe for your over-ripe bananas.
You know I often allow bananas to pass their prime on my counter. But quarantine put my banana ripening to a test when I went ahead and picked up two bushels of bananas in one trip. Why grab so many bananas? I just didn’t know when my next trip to the grocery store would be. So, in an effort to make sure there was a banana a day, I grabbed extra and moved on.
Flash forward a week to a counter full of bananas my husband deemed too ripe to enjoy. The perfect banana for him is one that is only slightly speckled with brown dots on the outside. Unfortunately for him, this is not a long window and they often sneak past their prime making them just perfect for all the banana bread my little heart could desire.
I don’t know about you, but the amount of banana bread made the first few weeks in quarantine quickly surpassed my quick bread quota. However, as stores began running out of yeast, the need for making quick bread at home grew. From plain banana bread to cinnamon swirl banana bread, we made it all! Until a huge chocolate craving hit and I knew I might die if I didn’t have a slice of chocolate cake or a chocolate muffin. This craving resulted in the most moist chocolate banana bread, which of course begged for a heaping scoop of chocolate chips.
HOW TO MAKE CHOCOLATE BANANA BREAD WITH CHOCOLATE CHIPS
To begin, preheat the oven to 350°F and spray a loaf pan with non-stick spray.
In a medium mixing bowl, whisk 1 cup flour, 1/2 cup cocoa powder, 1/2 tsp salt, and 1 tsp baking soda. Set aside.
In a large bowl mash 3 bananas until smooth. Add 1 egg, 3/4 cup brown sugar, 1 tsp vanilla, 1/4 cup canola oil, and 1/4 cup non-dairy buttermilk. Whisk until smooth.
Next fold the flour mixture into banana mixture until just combined. Add 1 cup non-dairy chocolate chips (I used Enjoy Life Dark Chocolate Chips).
Pour the batter into the prepared loaf pan and bake 50-60 minutes, or until toothpick comes out clean. Remove from oven and allow to cool slightly before diving in.
HOW RIPE SHOULD BANANAS BE FOR BANANA BREAD?
Patience is a virtue when it comes to allowing bananas to ripen for banana bread. It’s important to make sure your bananas are brown and soft to the touch to use in banana bread. DAIRY FREE CHANGES TO BANANA BREAD
Some of the changes in this moist banana bread include using a non-dairy buttermilk by mixing together non-dairy milk and a little apple cider vinegar. Swapping butter for oil also helps keep this a dairy free dish, as well as using non-dairy chocolate chips.
As always check to make sure the cocoa powder does not contain milk or other dairy byproducts.

Ingredients
- 1 c. Flour
- ½ c. Cocoa Powder
- 1 tsp. Baking Soda
- ½ tsp. Salt
- 3 Bananas ripe
- ¾ c. Brown Sugar
- 1 Egg
- 1 tsp. Vanilla
- ¼ c. Canola Oil
- ¼ c. Non-dairy Buttermilk
- 1 c. Chocolate Chips
Instructions

Preheat the oven to 350°F and prepare a loaf pan by spraying with non-stick spray. Set aside.

In a medium mixing bowl whisk together flour, cocoa powder, salt, and baking soda.

In a large mixing bowl mash banana until smooth. Add brown sugar, egg, vanilla, oil, and non-dairy buttermilk. Whisk until smooth.

Fold the flour mixture into the banana mixture until just combined. Stir in chocolate chips and pour batter into prepared loaf pan.

Bake for 50-60 minuted or until toothpick comes out clean.
