Welcome back to my toasty summer series where I am sharing, fast, flavorful, and fun takes on toast. Last week I shared a delicious snack or lunch recipe for Dairy-Free Pizza Toast.

This week I am elevating the classic avocado toast to another level topping it off with roasted cherry tomatoes and vegan feta.

It’s no secret here how much I have become obsessed with Follow Your Heart vegan feta crumbles. From using them in a vegan baked feta pasta to topping vegan hummus bowls with them, they have become a staple in our household and aren’t going away anytime soon.

Why We Love Avocado Toast with Roasted Tomatoes

The layers of this avocado toast with tomatoes and feta are simply addictive. The crunchy toast, topped with cream avocado, followed by juicy roasted tomatoes, and finished off with salty crumbles of vegan feta just can’t be beat.

We have been making this avocado and feta toast on repeat this summer for a number of reasons:

  • Colorful and flavorful. Each layer is not only a unique flavor, they each offer a change in color and texture.
  • Versatile. You can easily make this recipe as is or switch up the toppings listed in the serving suggestions.
  • Vegan. Made as is, this recipe is completely vegan.

Dairy-Free Changes to Avocado Toast with Feta

There are two key ingredients in this avocado and feta toast to keep in mind when making it dairy-free and vegan.

  • Bread– Be sure to check the ingredient list on your bread to make sure you have picked up a loaf that is made without milk, butter, or other dairy ingredients.
  • Vegan Feta– I used Follow Your Heart vegan feta crumbles to top this simple avocado toast with tomatoes.

How to Make Avocado Toast with Roasted Tomatoes

Ingredients You’ll Need

  • Grape Tomatoes– You can pick out your favorite grape or cherry tomatoes to make the roasted tomatoes.
  • Olive Oil– Tossed over the tomatoes before roasting.
  • Salt + Pepper– Helps bring out the best your grape tomatoes have to offer.
  • Avocado– Depending on the size of your bread and avocado you might need anywhere between 1/2- 1 whole avocado to make this toast.
  • Bread– You can pick your favorite bread to become the toast for this recipe. I love using sourdough bread.
  • Vegan Feta– Crumbled at the end for a salty, creamy, and tangy finish.

Step-by-Step Directions for Avocado, Tomato, and Feta Toast

  • Preheat the oven to 425°F.
  • Season tomatoes: On a small parchment paper lined baking sheet toss grape tomatoes with olive oil, salt, and pepper.
  • Roast in the preheated oven for 20 minutes.
  • Toast: When the tomatoes are done roasting, toast your bread to the desired level of toastedness.
  • Smash: Next, smash avocado on the piece of toast.
  • Top with roasted grape tomatoes.
  • Sprinkle vegan feta on top and enjoy!

  • ½ cup Grape Tomatoes
  • 1 teaspoon Olive Oil
  • 1 pinch Salt
  • 1 pinch Pepper
  • ½-1 Avocado
  • 1 slice Bread
  • 1 Tablespoon Vegan Feta

Instructions

  1. Preheat the oven to 425°F.
  2. On a small parchment paper lined baking sheet toss ½ cup grape tomatoes with 1 teaspoon olive oil, 1 pinch salt, and 1 pinch pepper.

  3. Roast in the preheated oven for 20 minutes.
  4. When the tomatoes are done roasting, toast your bread to the desired level of toastedness.
  5. Next, smash ½-1 whole avocado on the piece of toast.

  6. Top with roasted grape tomatoes.
  7. Sprinkle 1 Tablespoon vegan feta on top and enjoy!
